For more than 30 years, we at SchapfenMühle have been deeply involved with spelt – from contract farming to its use in the bakery. Today, we combine this experience in Schapfen Quality Spelt. Its versatile baking properties and distinctive flavor make it stand out. This traditional grain produces exceptionally moist and aromatic baked goods. Depending on the dough process, it develops a fascinating spectrum of aromas, ranging from nutty to fruity to sweet and malty.
Spelt also offers special nutritional benefits. It contains a high proportion of dietary fiber as well as vitamins A, E, B1, and B2. Additionally, it is characterized by a high content of minerals and valuable fatty acids.
This makes spelt the ideal base for premium breads, rolls, and fine pastries.
