For bakeries who want to make wholemeal baked goods without using wholemeal flour. Ease to use and good baking results speak in favour of this product. Just like the extruded wheat bran and the stabilized wheat germ in the product.

The product

Concentrate to produce wheat wholemeal breads and rolls, and for fibre enriched bakery products. Includes physically pretreated wheat flour, wheat gluten, malt flour and wheat sourdough.

The processing

Schapfen "Meine Mühle" Integral contains no improver or salt as ingredient, so it can be adapted to the bakers reqirements. The dosage is variable from 5 % – 25 %. Easy to use, gives a good dough stability.

The pastry

For a "clean label" wholemeal bread with a good taste and a long shelf life.
