Our emmer flakes are wholemeal flakes. In a particularly gentle process, the whole emmer kernels – which are cleaned and dehulled beforehand – are steamed and then rolled into emmer flakes. This preserves all important vitamins, minerals and fibre. Emmer flakes are not as soft as other cereal flakes and are, therefore, particularly suitable for use in bread that has a certain "al dente" bite to it.
SchapfenMühle offers standard qualities, as well as flakes "made to measure".
