Our emmer wholemeal flour is produced from the grain of the ancient cereal emmer. It is carefully milled and particularly suitable for dark bread rolls, loaves and doughs.
One of the oldest cereals known to man, emmer was cultivated as early as 12,000 years ago. Like spelt, it produces a husked grain, meaning that the grain is firmly enclosed in the husk and remains there even after threshing. Only once inside the mill are the grains separated from the husks through the so-called dehulling process.
