Put the spelt flour, fresh yeast, lukewarm water, salt and olive oil into a mixing bowl and knead with a handheld mixer (dough hook) to create a smooth and malleable dough.
Cover and leave in a warm place for about 15 minutes.
Roll out the dough into a rectangle, about half a cm thick and about 25 cm wide, brush with water and sprinkle thoroughly with sesame seeds. Then allow it to rest for another 15 minutes.
Preheat oven to 200 °C (top/bottom heat).
Cut the dough into strips about 1 cm wide and roller them slightly.
Place the individual strips on a baking tray lined with baking paper and bake for about 15 minutes.
