Ingredients

Icing

  • 250 g Icing sugar
  • A little lemon juice
  • Decor as desired
Preparation

Preheat the oven to 160°C (fan oven). Grate the yellow zest from 3 lemons and squeeze two of them.

Place the butter, sugar, vanilla sugar, eggs, lemon zest and the juice of two lemons in a mixing bowl and mix for approx. 1 minute on the highest speed.

Mix the baking powder into the flour and add to the mixing bowl. Mix for approx. 30 seconds at the highest speed.

Pour the dough onto a baking tray lined with baking paper and spread evenly. Place in the preheated oven and bake for approx. 25 minutes. Prick the cake several times with a fork and leave to cool.

Squeeze the third lemon and put the icing sugar in a small bowl. Gradually add the lemon juice and mix until you have a thick glaze.

Spread the icing evenly over the cake. If you wish, you can now sprinkle decorations such as chopped pistachios or sprinkles over the cake.
