Place the quark, eggs, salt and sugar in a mixing bowl and stir until smooth.
Add the remaining ingredients and mix until a homogeneous mass forms.
Allow it to rest for about 20 minutes.
Put the butter in a pan and heat it.
Form small, thin cookies with moistened hands and bake them until golden brown on both sides at a low to medium heat.
Sprinkle with cinnamon sugar or serve with apple compote.
