Ingredients
  • 2 onions, medium size
  • 2 courgettes, medium size
  • 2 cloves of garlic
  • 2 tomatoes, medium size
  • 6 tomatoes, dried
  • 350 g SchapfenMühle spelt like rice
  • 500 g vegetable broth
  • 30 g grated parmesan
Preparation

Chop the onions, courgettes, garlic cloves, tomatoes and dried tomatoes.

Sauté the diced onions, add the courgettes, and continue to cook with the onions.atoes and dried tomatoes, and continue to sauté.

Add the garlic cloves, tomatoes and dried tomatoes, and continue to sauté.

Add the spelt rice and heat through.

Add the stock and simmer until the water is absorbed (about 15-20 minutes).

Fold in the parmesan before serving.
